Lontong Medan is a typical Medan dish that consists of lontong, sayur lodeh, rendang, sambal tauco, and various other side dishes. Lontong Medan is famous for its deliciousness and is one of the favorite dishes in Medan.

Ingredients:

  • Lontong:
    • 1 liter rice
    • 1 pandan leaf
    • 1 lemongrass stalk, bruised
    • 1 tsp salt
  • Sayur Lodeh:
    • 200 grams of water pumpkin, diced
    • 100 grams of long beans, cut into pieces
    • 100 grams of green beans, cut into pieces
    • 50 grams of sweet corn, kernels
    • 100 grams of carrots, cut into pieces
    • 50 grams of cabbage, thinly sliced
    • 200 ml thick coconut milk
    • 100 ml thin coconut milk
    • 1 bay leaf
    • 1 jeruk leaf
    • 1 lemongrass stalk, bruised
    • 1 segment of galangal, bruised
    • 1 segment of ginger, bruised
    • 1 tbsp garlic, minced
    • 1/2 tsp coriander powder
    • 1/4 tsp cumin powder
    • 1/4 tsp nutmeg powder
    • 1/4 tsp black pepper powder
    • Salt and sugar to taste
  • Rendang:
    • 500 grams of beef, diced
    • 250 ml thick coconut milk
    • 100 ml thin coconut milk
    • 5 bay leaves
    • 3 jeruk leaves
    • 1 lemongrass stalk, bruised
    • 1 segment of galangal, bruised
    • 1 segment of ginger, bruised
    • 3 cloves of garlic, minced
    • 3 shallots, minced
    • 1 tbsp coriander powder
    • 1/2 tsp cumin powder
    • 1/4 tsp nutmeg powder
    • 1/4 tsp black pepper powder
    • Salt and sugar to taste
  • Sambal Tauco:
    • 50 grams of tauco
    • 2 cloves of garlic, minced
    • 1 red chili pepper, thinly sliced
    • 1/2 tsp sugar
    • Salt to taste
    • Water to taste
  • Side dishes:
    • Balado eggs
    • Red crackers
    • Vermicelli

Instructions:

Lontong:

  1. Wash the rice until clean.
  2. Add the rice, pandan leaves, lemongrass, and salt to a pot.
  3. Pour in enough water to cover the rice.
  4. Bring the water to a boil, then reduce heat to low and simmer for 45 minutes to 1 hour, or until the rice is cooked through.
  5. Remove from heat and let cool.

Sayur Lodeh:

  1. Heat the oil in a pan over medium heat.
  2. Add the garlic, shallots, lemongrass, galangal, and ginger and cook until fragrant.
  3. Add the coriander powder, cumin powder, nutmeg powder, and black pepper powder and cook for 1 minute.
  4. Add the beef and cook until browned.
  5. Add the thick coconut milk and thin coconut milk and bring to a boil.
  6. Add the bay leaves, jeruk leaves, and salt and sugar to taste.
  7. Reduce heat to low and simmer for 30 minutes, or until the beef is tender.

Rendang:

  1. Heat the oil in a pan over medium heat.
  2. Add the garlic, shallots, lemongrass, galangal, and ginger and cook until fragrant.
  3. Add the coriander powder, cumin powder, nutmeg powder, and black pepper powder and cook for 1 minute.
  4. Add the beef and cook until browned.
  5. Add the thick coconut milk and thin coconut milk and bring to a boil.
  6. Add the bay leaves, jeruk leaves, and salt and sugar to taste.
  7. Reduce heat to low and simmer for 1 hour, or until the beef is tender and the rendang is thick and
