Soto Medan is a yellow noodle soup dish that originates from Medan, North Sumatra. The broth is made from coconut milk and beef or chicken broth, and is spiced with various spices such as garlic, shallots, ginger, turmeric, galangal, lemongrass, jeruk leaves, and cardamom. Soto Medan is usually served with vermicelli, shredded chicken or beef, potato perkedel, boiled egg, and sambal.

Here is a recipe for Soto Medan:

Ingredients:

  • 1 liter water
  • 500 grams beef or chicken, cut into pieces
  • 1 lemongrass stalk, bruised
  • 2 bay leaves
  • 1 pandan leaf
  • 1 segment of galangal, bruised
  • 1 segment of ginger, bruised
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1/4 tsp nutmeg powder
  • 1/4 tsp black pepper powder
  • Salt and sugar to taste
  • 250 ml thick coconut milk
  • 100 ml thin coconut milk
  • Fried shallots, for sprinkling
  • Thinly sliced ​​spring onions, for sprinkling

Side dishes:

  • Vermicelli, to taste
  • Shredded chicken or beef, to taste
  • Potato perkedel, to taste
  • Boiled egg, to taste
  • Sambal, to taste

Instructions:

  1. Bring water to a boil in a pot. Add beef or chicken, lemongrass, bay leaves, pandan leaves, galangal, and ginger. Cook until the meat is tender.
  2. Add coriander powder, cumin powder, nutmeg powder, and black pepper powder. Stir well.
  3. Add thick coconut milk and thin coconut milk. Stir well.
  4. Season with salt and sugar to taste. Cook until the broth boils and thickens.
  5. Remove from heat and serve soto with vermicelli, shredded chicken or beef, potato perkedel, boiled egg, sambal, fried shallots, and spring onions.
